Cold pressed olive oil contains higher levels of Oleic acid which are healthy monosaturated fats. Oleic acid helps to retain the quality of the oil for longer. High levels of vitamins and healthy fats make it great for frying, roasting, baking, sautéing and using straight from the bottle as a salad dressing or bread dip. In order to produce this healthiest form of oil, the olives are washed and then ground in stone mills forming a paste. The paste is then pressed to extract the oil. It has a stronger flavour and lower acidity than regular virgin olive oil, which is slightly more processed.
